The Discovery of Enzyme


Existence of enzymes came to be understood in 19th century, the "century of science". In 1833, substance that saccharifies starch was extracted from malt solution and named diastase.

This was a first enzyme discovered. Subsequently, invertase, trypsin, laccase and phytase were discovered.

In 1926, urease was crystallised and then urease gradually came to be thought as a protein.
